The inaugural Gault&Millau Exclusive Dinner Regional Tour 2026 presents a carefully curated selection of 10 top chefs and restaurants through a series of exceptional Signature Dish Dinners, each featuring a tasting menu created exclusively for this occasion.

Throughout the year, Gault&Millau inspectors carefully evaluate individual dishes and assign them detailed scores. Soyshi is a modern Asian restaurant located in the Líšeň district of Brno, where ingredients and cultures come together in a harmonious blend.


The airy, elegant space — defined by a striking open kitchen — features a minimalist design with subtle touches of Japanese aesthetics. The cuisine is built on the principles of modern Asian fusion, combining Japanese, Thai, and Vietnamese influences with a European sense of presentation.

Behind the concept stands a strong trio of “T’s”, bringing together extensive experience from across the gastronomy world.


Tony Do has been active in the hospitality business since 2010 and also runs the Diandi concept in the centre of Brno.

Tomi Nguyen is behind the successful café and bistro Večerka, creates coffee-focused content followed by millions, and has also been part of the catering team for Formula 1.

Tomáš Ngoc gained experience in Michelin-starred restaurants in London and worked as a manager in international VIP catering for Formula 1.


The menu is brought to life under the leadership of creative chef Dima Pavliuk and head chef Tuan Anh Do. Their dishes stand out for the quality and freshness of ingredients, seasonality, and a thoughtful fusion of global flavours, all with a distinctive Asian touch.
