Head Chef Láďa Vaníček
Láďa Vaníček has been part of the Mlýnec story since 2014. Starting in the cold kitchen, he worked his way through every section of the restaurant before taking on the role of Head Chef. Today, he leads the culinary team with a philosophy rooted in craftsmanship, respect for ingredients, and meticulous attention to detail—qualities that are evident in every dish that leaves the kitchen.
Driven by curiosity and creativity, he constantly seeks new flavour combinations while allowing exceptional ingredients to shine in their purest form. His approach combines technical precision with a deep appreciation for the natural character of each product.
A commitment to sustainability is an integral part of his cooking. The principles of zero-waste gastronomy, together with close collaboration with Czech farmers and local producers, provide a strong foundation for the restaurant’s culinary identity.
Together with his team, Chef Vaníček brings forgotten Czech specialities back to life. While respecting traditional techniques and culinary heritage, he is not afraid to embrace the most advanced gastronomic methods in pursuit of exceptional flavour. The result is a timeless and elegant cuisine that blends Czech and international influences, built around the finest seasonal and locally sourced ingredients.
