Today's restaurant scene demands constant change, with menus continually evolving in an effort to keep the offering fresh and exciting. Yet what is often overlooked is that chefs can exhaust their creativity in this relentless pursuit of something new, rarely returning to the dishes that truly define them. These signature dishes bear the chef's distinctive style, personality and craftsmanship, creating the unmistakable identity of a restaurant.

Experience a Harvest Celebration at the Mill
A unique modern interpretation of a traditional harvest menu by Liberec-based chef Vojtěch Barac has been created to complement the distinctive genius loci of Podhlavický Mlýn. It reflects his philosophy of combining modern gastronomy with respect for the place itself, traditional craftsmanship and local ingredients.

Podhlavický mlýn
Podhlavický Mlýn welcomes you to a peaceful corner of the Český Dub region, an area rich in history, tradition and beautiful natural scenery. The original mill, dating back to the early 17th century, has been respectfully transformed into a boutique hotel and restaurant, combining the charm of its historic past with contemporary comfort. The result is a unique setting designed to offer unforgettable moments of relaxation, with a sense of luxury and tranquillity.
The current owners had a clear vision: to create an exceptional boutique hotel built on family values, preserving local traditions while respecting the legacy of previous generations and the mill's original owners. Their mission is to preserve the beautifully restored mill for future generations and to care for its unique genius loci – the distinctive spirit of the place.

PM89 Restaurant
PM89 Restaurant offers distinctive cuisine built around high-quality ingredients, herbs and vegetables from its own garden, as well as fresh eggs from the mill’s own hens. The seasonal menu evolves with the rhythms of nature, with every dish prepared with a focus on maximum freshness, sustainability and attention to detail.
The dining experience is enhanced by views of the iconic mill wheel, which adds to the restaurant’s unique atmosphere.
The cuisine draws inspiration from the richness of local ingredients and the traditions of Czech cooking, with every dish prepared with meticulous care. Come and discover how the connection between nature and culinary craftsmanship can create truly unforgettable moments.

Chef Vojtěch Barac
Vojtěch Barac, Head Chef of PM89 Restaurant, gained his experience at some of Prague’s leading restaurants, as well as during an internship at the Michelin-starred La Degustation Bohême Bourgeoise.
His cuisine is rooted in honest Czech culinary traditions, which he combines with French techniques, his own creativity and high-quality ingredients from the Liberec region.
At Podhlavický Mlýn, his aim is to create contemporary cuisine while respecting tradition, the local landscape and the seasons. His goal is to create dishes that are thoughtful, authentic and natural – the kind of food that makes guests want to return to the mill time and again.
